This is another favorite from my friend Tiff - thanks Tiff!
cut chicken into bite size pieces and cook with 1/2 packet taco seasoning in skillet until juices run clear. Add: 1 c. salsa 1/4 c. apricot jam 1/2 c. water 1 T. cilantro 2 T. lime juice boil and then stir in 2 cans of drained black beans. Delicious! You can also serve this over rice. I sometimes double the water and add more jam too.
